The roastery works out of Richmond, Virginia, on Cleveland Street. Everything it sells is single origin. Colombia supplies three coffees and Ethiopia the other two, and there are no blends waiting to fill the gap when an origin runs out.

Processing is where the shelf divides. Three lots are washed and two are anaerobic or extended ferment, so a drinker can buy from the same country twice and come away with two different accounts of what the fruit should be doing. Acidity averages toward the high end of the five-point scale while body stays at the middle.
